Springtime edibles

It’s spring and trout lilies cover the forest floor! They taste amazing: Sweet and astringent at the same time. But if you eat more than a few, I hear you can get a stomach ache.

Dandelion flowers are also great for a quick munch. I’ve been eating them quite often lately.They are best when freshly opened, young and new. They taste sweet and have a chewy texture, and they’re so readily available — just pluck them off the ground! Of course, it’s important to make sure they’ve not been sprayed with pesticides.

Wild leeks abound. You can identify them by their bright purple stems and tell-tale onion-y odor.
